Shaping 12 tiny patties is fiddly. Here the beef is pressed into one large sheet, baked, then laid over a whole slab of soft rolls with cheddar, pickles and a quick burger sauce. A brush of butter and some sesame seeds on top, 10 more minutes in the oven, and you cut them into neat sliders that look as if you built each one by hand.

## Ingredients

### Beef

- 700 g lean ground beef, 85-90% lean
- 1 tbsp Worcestershire sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 3/4 tsp salt
- 1/2 tsp black pepper
### Burger sauce

- 60 ml mayonnaise, 1/4 cup
- 2 tbsp ketchup
- 1 tbsp yellow mustard
- 1 tbsp dill pickles, finely chopped
### Sliders

- 12 slider rolls or soft dinner rolls, joined in one slab
- 8 slices cheddar, about 170 g
- 60 g dill pickle slices, about 1/2 cup, patted dry
### Topping

- 2 tbsp butter, melted
- 1 tsp sesame seeds

## Equipment

- Rimmed baking sheet
- Parchment paper
- 23 x 33 cm (9 x 13 inch) baking dish
- Serrated knife
- Pastry brush
- Instant-read thermometer

## Instructions

1. **Shape the beef.** Heat the oven to 200°C (400°F) and line a rimmed baking sheet with parchment paper. Mix the beef with the Worcestershire sauce, garlic powder, onion powder, salt and pepper, then press it into an even rectangle about 23 x 33 cm (9 x 13 inches), roughly the size of your slab of rolls.
2. **Bake the beef.** Bake for 12-15 minutes, until no pink remains and the centre reaches 71°C (160°F). Carefully pour off the fat and blot the top with paper towel.
3. **Make the sauce.** While the beef bakes, stir the mayonnaise, ketchup, mustard and chopped pickles together in a small bowl.
4. **Assemble.** Without separating the rolls, slice the whole slab in half horizontally with a serrated knife. Set the bottom half in the baking dish. Slide the beef on top using the parchment, cover it with the cheese slices, then add the pickle slices and spread over the sauce. Replace the top half of the rolls.
5. **Bake and cut.** Brush the tops with melted butter and sprinkle with sesame seeds. Bake for 8-10 minutes, until the cheese has melted and the tops are golden. Cut along the lines of the rolls into 12 sliders and serve warm.

## Tips

- Press the beef slightly larger than the slab of rolls; it shrinks as it cooks.
- Pat the pickles dry so they do not make the buns soggy.
- If the tops brown before the cheese melts, cover the dish loosely with foil.

## Variations

- Bacon cheeseburger sliders: add 6 slices of crisp cooked bacon over the cheese.
- Caramelized onion: cook 2 sliced onions in 1 tbsp butter over medium-low heat for 20-25 minutes until deep golden, and spread them over the beef before the cheese.
- Chicken or turkey sliders: use ground chicken or turkey and bake it until it reaches 74°C (165°F).

## Storage

- Fridge: Refrigerate leftovers within 2 hours in an airtight container for up to 3 days.
- Reheat: Reheat covered with foil at 180°C (350°F) for 10-15 minutes, or microwave single sliders for 30-45 seconds, until hot through, 74°C (165°F).

## Frequently asked questions

### How do you make sliders for a crowd?

Bake the beef as one large sheet instead of shaping small patties, then build all the sliders at once on a slab of joined rolls. One batch makes 12 sliders; use two baking dishes and double everything for 24.

### What temperature should ground beef be cooked to?

Cook ground beef to 71°C (160°F). Check the thickest part of the beef sheet with an instant-read thermometer before you assemble the sliders.

### Can I make cheeseburger sliders ahead?

Bake the beef and make the sauce up to 1 day ahead and refrigerate them. Assemble with the cold beef and bake for 15-18 minutes, covered with foil for the first 10, until hot in the centre, 74°C (165°F).

### What rolls are best for sliders?

Soft, slightly sweet dinner rolls or slider buns sold joined together in a pack work best, because you can slice the whole slab in one go. Brioche rolls are a richer option.
