Quick answer
Cook boneless chicken pieces to 74°C (165°F) and whole chickens to 82°C (180°F) in the thigh. Thighs stay juicier than breasts and suit air frying, slow cooking and roasting; breasts are best cooked quickly and rested before slicing.

Frequently Asked Questions
What internal temperature should chicken be cooked to?
Cook chicken pieces and ground chicken to 74°C (165°F), and a whole bird to 82°C (180°F), measured in the thickest part of the thigh without touching the bone.
Are chicken thighs or breasts better?
Thighs have a little more fat, so they stay juicy and forgive a few extra minutes of cooking. Breasts are leaner and cook faster, but they dry out if overcooked. Most of our recipes work with either and give timings for both.
How long can cooked chicken stay in the fridge?
Refrigerate cooked chicken within 2 hours and eat it within 3-4 days. Reheat leftovers until they are steaming hot, 74°C (165°F) in the centre.
Should I wash raw chicken?
No. Rinsing raw chicken spreads bacteria around your sink and counter. Pat it dry with paper towel instead, which also helps it brown.
