Soup Recipes
A pot of soup turns a carton of stock, a few vegetables and a little meat or a can of beans into dinner for the whole family, and most of these reheat well the next day. The collection covers stovetop soups that are ready in about an hour, slow cooker soups and chilis you can leave all day, and favourites from around the world such as chicken pho, harira, wonton soup and French onion soup.
Almost all of them freeze. When a soup has noodles, pasta or dairy in it, the recipe tells you which part to leave out before freezing and add fresh when you reheat it.

Frequently Asked Questions
Can you freeze homemade soup?
Yes, most soups freeze for up to 3 months. Cool the soup quickly, leave space at the top of the container for it to expand and thaw it overnight in the fridge. Freeze noodle and pasta soups without the noodles, and add milk, sour cream or cheese after reheating so the soup does not turn grainy.
How long does soup keep in the fridge?
Most homemade soups keep for 3-4 days in an airtight container in the fridge. Refrigerate soup within 2 hours of cooking and reheat it until it is steaming hot, 74°C (165°F).
Which soups can I make in a slow cooker?
Slow cooker butternut squash soup, red lentil soup and loaded baked potato soup all cook hands-off, along with beef chili, white chicken chili, three bean chili and Hungarian beef goulash. Each recipe gives LOW and HIGH cooking times.
