Slow Cooker Pot Roast

Pot roast starts with a tough, well-marbled cut. Beef chuck is full of connective tissue, and hours of gentle heat turn it into meat that pulls apart with a fork, while the potatoes, carrots and onion underneath cook in the beefy juices. Searing the roast first is optional but worth the 10 minutes: the browned crust adds flavour to the meat and darkens the gravy, which you make from the cooking liquid at the end.
