This guide covers 15 leftover rotisserie chicken recipes from Savour: 7 list cooked, shredded chicken on the ingredient list, and 8 start from raw chicken but give a rotisserie or leftover-chicken shortcut. The quickest of the first group by stored total time are Sheet Pan Chicken Nachos (30 minutes), Buffalo Chicken Sliders (35 minutes) and Air Fryer Chicken Taquitos (38 minutes).

For each one we list the grams of cooked chicken it calls for, what the recipe does with it, which steps a shortcut replaces and the dish's own fridge and freezer notes. Every Savour chicken dish is on the chicken recipes page.

Which leftover rotisserie chicken recipes are quickest?

These 7 recipes are written for cooked chicken, so their stored total times already start from shredded meat. Sorted by total time:

All 7 name rotisserie or leftover chicken: 5 on the ingredient line (the sliders, taquitos, quesadillas, pot pie and buffalo chicken dip), the enchiladas in a tip and the nachos in an FAQ.

Which weeknight dinners start with shredded chicken?

Sheet Pan Chicken Nachos use the least chicken of the 7, warmed in a skillet with salsa, chili powder and cumin until steaming hot, 74°C (165°F), then layered with tortilla chips, black beans and cheese and baked at 200°C (400°F) for 8 to 10 minutes. The recipe lists the nachos as gluten-free if the chips, salsa and spice blend are labelled gluten-free.

Buffalo Chicken Sliders heat the chicken in butter, cayenne pepper hot sauce and garlic powder, then bake it with cheese inside 12 joined slider rolls at 190°C (375°F), 10 minutes under foil and 5 uncovered, until the filling reaches 74°C (165°F).

Sheet Pan Chicken Quesadillas toss the chicken with salsa and spices, add red pepper, corn, green onions and 300 g of cheese, and fold it into 8 large flour tortillas on one sheet pan. The pan bakes at 220°C (425°F) under a second pan for 20 minutes, then 5 to 8 minutes uncovered, and is cut into 12 pieces.

Which chicken bakes can you make ahead or freeze?

Cheesy Chicken Enchiladas mix the chicken with black beans, half the cheese and some of the homemade red sauce, roll it in 8 flour tortillas and bake at 190°C (375°F) for 20 to 25 minutes. At about 760 calories and 54 g protein per serving (estimate), they have the most protein of the 15 recipes here. The recipe's FAQ says they can be assembled and refrigerated for up to 24 hours: add the final cheese just before baking and about 10 minutes to the baking time.

Easy Chicken Pot Pie stirs the chicken, shredded or diced, into a thyme sauce with onion, carrots, celery and peas; its ingredient line says rotisserie or leftover thighs work well. It bakes under a ready-made crust or puff pastry at 200°C (400°F) for 25 to 30 minutes, until the centre of the filling reaches 74°C (165°F). Both bakes freeze unbaked for up to 3 months.

What party food can you make with leftover chicken?

Air Fryer Chicken Taquitos bind the chicken with cream cheese, shredded cheese, salsa, spices, cilantro and lime, roll it into 12 small tortillas and air fry them in batches at 200°C (400°F) for 7 to 9 minutes, until the filling is 74°C (165°F) in the centre. Rolled, uncooked taquitos freeze for up to 3 months and cook from frozen at 190°C (375°F) in 12 to 14 minutes. Our air fryer cooking times and temperatures guide sets them beside 17 other air fryer recipes.

Slow Cooker Buffalo Chicken Dip has 6 ingredients besides the optional and serving ones: the chicken, cream cheese, hot sauce, ranch or blue cheese dressing, cheddar and green onions. It cooks on LOW for 2 to 3 hours or HIGH for 1 to 1.5 hours, until the centre reaches 74°C (165°F), and serves 10. Its oven variation bakes at 180°C (350°F) for 20 to 25 minutes.

Which chicken recipes have a rotisserie chicken shortcut?

The next 8 recipes start from raw chicken, and their stored total times are for that method; none stores a time for its shortcut.

Soups, stews and chili

  • Tortilla soup: simmer the spiced broth for 15 minutes, then add the chicken with the beans and corn, instead of simmering 700 g of raw thighs for 20 to 25 minutes.
  • Noodle soup: simmer the vegetables in the stock with the herbs for 15 minutes, then add the chicken with the noodles. The FAQ says it only needs to heat through.
  • Chicken and dumplings: simmer the thickened broth with the herbs for 10 minutes, then stir in the chicken and the cream before the dumplings go on.
  • White chicken chili: cook everything else on LOW for 3 to 4 hours (5 to 6 hours with raw chicken), then stir in the chicken with the cream cheese and heat until it reaches 74°C (165°F).

All 4 are in the soup recipes collection.

Fried rice, pasta and salad

  • Fried rice: skip step 2, which stir fries 400 g of raw thighs, and add the chicken with the eggs, tossing until it is hot through. The rice is a leftover too: 650 g of cold cooked rice, ideally cooked the day before. Our guide on what to make with leftover rice sets it beside 6 more cooked-rice dinners.
  • Mac and cheese: the FAQ tosses the chicken with 2 tbsp hot sauce and stirs it in with the pasta instead of searing raw chicken, heating it until steaming hot, 74°C (165°F).
  • Lasagna: the chicken replaces the 700 g of poached breasts. The FAQ says this saves around 20 minutes, and to remove the skin and bones first.
  • Chicken salad: a tip says to use cooked chicken breast from leftovers or a rotisserie chicken and skip the poaching.

How much shredded meat do you get from a rotisserie chicken?

A tip in the buffalo chicken dip recipe says a rotisserie chicken usually gives 450 to 600 g of shredded meat. Against the 15 recipes:

  • 280 to 375 g: the fried rice, nachos, taquitos and buffalo mac and cheese. One bird leaves meat over, even at the low end.
  • 420 to 450 g: both soups, the sliders, quesadillas, enchiladas, pot pie, buffalo chicken dip and chicken and dumplings. One bird covers each of them at the low end.
  • 500 g: the white chicken lasagna and the chicken salad.
  • 600 g: the white chicken chili, the top of the range.

So 12 of the 15 need 450 g or less. The recipes convert cups differently (3 cups is 375 g in the taquitos, 420 g in the soups and 450 g in the pot pie), so we list grams.

Do you need to reheat cooked chicken before adding it?

For the hot dishes, yes, and each recipe builds it into the method. Six of the 7 recipes written for cooked chicken give 74°C (165°F) as the target: the nachos warm the chicken to it in a skillet, and the sliders, taquitos, quesadillas, pot pie and buffalo chicken dip cook until the filling reaches it in the centre. The enchiladas give no temperature; their FAQ says the bake heats the already-cooked filling through until the sauce bubbles.

Of the shortcuts, the mac and cheese and white chili also name 74°C (165°F), and the lasagna bakes until its centre reaches it. Government food safety guidance gives the same 74°C (165°F) for leftovers. Chicken salad is the exception: it is served cold, and the recipe says to cool the chicken first, because warm chicken makes the mayonnaise oily and thin.

What can you use instead of leftover chicken?

Only swaps written in the recipes are listed, and the stored times and nutrition estimates are for each recipe as written.

  • No cooked chicken: the sliders' tip poaches 600 g of boneless breasts in simmering salted water for 15 to 18 minutes, to 74°C (165°F) in the thickest part, then shreds them. The enchiladas say to poach or bake raw chicken to 74°C (165°F).
  • Ground beef: the nachos brown 450 g of lean ground beef with the spices until no pink remains, 71°C (160°F); the taquitos use 375 g of browned, drained ground beef cooked to 71°C (160°F).
  • Meatless: the nachos use 2 cans of black beans and 1 cup of corn; the taquitos, 1 can (540 ml / 19 oz) of black or pinto beans, lightly mashed; the quesadillas, 300 g of sautéed mushrooms and onions plus 1 can of black beans.
  • Breaded chicken: the sliders' crispy variation uses 450 g of cooked, chopped breaded chicken pieces, tossed in the sauce just before layering.

Swapping raw cuts is a separate question: our guide to using chicken thighs instead of breasts gives the times from 11 Savour recipes, the white chicken chili among them.

How long do leftover chicken dishes keep?

These are each recipe's notes for the finished dish. Of the 15, 12 say to refrigerate within 2 hours at most (the fried rice within 1 hour if you can); keeping food at safe temperatures is one of the World Health Organization's five keys to safer food. For plain cooked chicken, government food storage guidance gives cooked poultry 3 to 4 days in the fridge and 4 to 6 months in the freezer.
