Frequently Asked Questions
How do I know when fish is cooked?
Cook fish to 70°C (158°F) in the thickest part. It should look opaque all the way through and flake easily with a fork.
How do I know when shrimp is cooked?
Shrimp is done when it turns pink and opaque throughout and curls into a loose C shape. A tight O shape means it has overcooked and will be rubbery.
Can I use frozen shrimp or fish?
Yes. Thaw it overnight in the fridge, or seal it in a bag and submerge it in cold water for 20-30 minutes. Pat it dry before cooking so it sears instead of steaming.
